Natural stone, whether it's fieldstone, ashlar, or full-bed veneer, is quarried rock. It's dense, heavy, and has essentially minimal water absorption compared to manufactured products, so freeze-thaw cycling has less to work with. It's also been doing this job in the Blue Ridge foothills for as long as there have been stone buildings here, which is a track record cultured stone doesn't have. Full-bed natural stone also carries its own structural weight into the wall, so it doesn't rely on a mechanical attachment system the way veneer products do.
Cultured stone is a lightweight concrete product cast in molds and pigmented to mimic natural stone's texture and color. It's easier to install and looks convincing from a normal viewing distance. Its long-term durability depends heavily on the installation: it needs a proper drainage plane, flashing, and weep holes behind it, because if water gets trapped against the concrete backing and freezes, it can crack or pop the veneer loose. Manufacturers have improved these products considerably over the years, but the installation detailing still matters more for cultured stone than it does for solid natural stone.
