We build with severe weather grade brick or dense natural stone on the exposed faces, and we cap the chimney or chase properly so water can't work its way into the joints and pop them apart come January.
We design the fireplace to match the rest of the patio or hardscape project, the same stone facing on a seat wall, matching brick coursing on the house, then build the whole thing by hand: footing, block core, firebox, chimney, and cap.
