It's the least forgiving mix under thermal movement and ground shift, so masons reserve it for situations where raw compressive strength matters more than the mortar's ability to absorb stress, like foundations, heavily loaded piers, and masonry set directly against soil below grade. It's not a mix you'd choose for general above-grade brick or chimney work.
That lack of give is exactly why Type M is the wrong call for most freeze-thaw exposed masonry up here. A rigid mortar joint can't absorb the expansion and contraction that comes with a hard freeze-thaw winter, so instead of the joint cracking first, the stress can transfer into the brick or stone itself and cause the face to spall. We use Type M sparingly and only where the structural load genuinely calls for it.
