Fresh mortar generally needs about 24 to 72 hours of protection from heavy rain or standing water before it's cured enough to resist washing out of the joint. Full cure strength takes considerably longer, often several weeks, but that early window right after the work is finished is when mortar is most vulnerable to being softened or displaced by water.
Mortar gains strength through hydration, a chemical reaction between cement and water that keeps developing over time rather than finishing all at once. In the first day or two, the mortar is still soft enough that hard, driving rain can wash cement paste out of the joint before it's locked in place, leaving a weaker, pitted joint even if it looks fine once it dries. That early period is the one that actually matters for planning around weather.
